Main Ingredients
  • 120g fresh cabbage
  • 1 small can of Spam
  • 2 fresh eggs

Seasonings & Extras
  • 1/2 tsp salt
  • 1 tsp sesame oil
  • Pinch of black pepper (to taste)
  • 2 perilla leaves (깻잎)

Cooking Instructions

Step 1

Start by washing 120g of fresh cabbage. Finely shred the cabbage into thin strips. Rinse the shredded cabbage gently under warm running water 2-3 times to remove any bitterness and enhance its crispiness. Drain well.

Step 2

In a bowl, combine the drained shredded cabbage with 2 cracked fresh eggs. Add 1/2 tsp of salt, 1 tsp of sesame oil, and a pinch of black pepper to your liking. Mix everything thoroughly with a spatula or chopsticks until you have a well-combined, soft batter where the cabbage is coated.

Step 3

Rinse the Spam lightly under warm water to remove excess oil. Slice the Spam can in half horizontally. Wrap each half with a perilla leaf (깻잎). Lightly coat the Spam (wrapped in perilla) with a thin layer of cornstarch or potato starch on both sides. This helps the batter adhere better during cooking.

Step 4

Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Spread half of the cabbage and egg mixture thinly on the hot pan. Carefully place the perilla-wrapped Spam onto the cabbage mixture. Then, cover the Spam completely with the remaining cabbage mixture, as if tucking it into a cabbage blanket.

Step 5

Reduce the heat to medium-low. Cook the fritter until the cabbage mixture is golden brown and set on the bottom. Carefully flip it using a spatula and the pan. Cook the other side until it’s also golden brown and crispy. Roll the sides slightly to ensure the Spam is heated through and the sides of the fritter are nicely browned.
