  • Songhwa mushrooms 200g
  • 1 Egg
  • 1/2 tsp Salt
  • A little cooking oil
  • 1 Tbsp perilla oil

For Songhwa mushrooms, it’s best to use them without washing if possible. Gently brush off any dirt or debris with a paper towel. If you must wash them, rinse very briefly under running water and ensure they are completely dry. (Over-soaking can diminish their flavor.)

Trim off the thick ends of the Songhwa mushroom stems. Then, cut the mushrooms into bite-sized pieces that are easy to eat (about 2-3 cm). Cutting them into attractive shapes will make the finished dish look even more appealing.

In a bowl with the cut Songhwa mushrooms, add 1 egg and 1/2 teaspoon of salt (you can adjust slightly to 2/3 tsp based on your preference). The egg will add a wonderful tenderness and richness.
