Ingredients
- 500g baby potatoes (small size)
- 2 Tbsp unsalted butter
- Pinch of salt
- 1 Tbsp sugar

Begin by washing the baby potatoes thoroughly. Peel them thinly. If you’re not cooking them immediately, soaking the peeled potatoes in cold water can prevent them from turning brown.

Place the peeled baby potatoes in a pot and add enough water to just cover them. Add a pinch of salt for seasoning. Bring the water to a boil over high heat, then reduce to medium heat and simmer for about 20 minutes, or until the potatoes are tender when pierced with a fork. Drain the water completely.
