  • Spicy chili pepper, 1 (optional, halved lengthwise, then sliced 0.5cm thick on the bias)
  • Button mushrooms, 3 (sliced into bite-sized pieces)
  • Oyster mushrooms, 1/3 pack (trim ends and separate strands)
  • Scallion greens, 1/3 stalk (chopped for garnish)
  • Sesame seeds, a pinch (for garnish)
  • Egg, 1 (for frying)
  • Vegetable oil, 1 Tbsp

Stir-Fried Udon Sauce

  • Oyster sauce, 2 Tbsp
  • Soy sauce, 1/2 Tbsp
  • Sesame oil, 1 Tbsp
  • Minced garlic, 1/2 Tbsp

For the zucchini and spicy chili pepper (if using), halve them lengthwise and then slice diagonally into 0.5cm thick pieces. Cut the bacon into approximately 2cm segments. Rinse the pre-cooked mussels lightly under cold running water.

In a bowl, combine 2 Tbsp oyster sauce, 1/2 Tbsp soy sauce, 1 Tbsp sesame oil, 1/2 Tbsp minced garlic, and 1/2 tsp black pepper. Adding the mushrooms later prevents them from releasing too much moisture, which can make the vegetables mushy.
