  • Pork belly or shoulder, appropriate amount
  • Fresh oysters, appropriate amount (rinsed and drained)
  • 1 Onion, cut into large pieces
  • 3-4 Bay leaves
  • 2 Tbsp Doenjang (fermented soybean paste)

Pork Seasoning

  • 1 tsp Salt
  • 1 tsp Sugar

Cooking Instructions

First, let’s season the pork. Sprinkle 1 tsp of salt and 1 tsp of sugar evenly over the pork. If you have a large piece of meat, let it marinate for about 1 hour. For smaller pieces, 30 minutes is sufficient. The sugar helps tenderize the meat and enhances its flavor.

Now, it’s time to cook the pork. In a pot, add enough water to cover the pork. Add 2 Tbsp of doenjang, 1 large onion cut into chunks, and 3-4 bay leaves. Once the water comes to a boil, add the seasoned pork. Reduce the heat to medium-low and simmer for 30 to 45 minutes. Adjust the cooking time based on the thickness of the pork and your desired tenderness. Thinner cuts may only need 30 minutes, while thicker cuts might benefit from 45 minutes to become tender. The doenjang, bay leaves, and onion are crucial for removing any porky smell and infusing the meat with a delicious aroma.
