First, gently rinse the oysters under cool running water to clean them. Be careful not to wash too vigorously, as this can break them apart. Once cleaned, drain them thoroughly in a colander and set aside. Since we’ll be eating this right away, we won’t be salting the cucumber. Instead, scrub the cucumber well with coarse salt to remove any dirt, then slice it into thin, half-moon shapes for easy eating.
