- 1 pinch salt

Cooking Instructions
Step 1
Rinse the chicken wings or drumettes thoroughly. Use kitchen shears to trim off any excess fatty parts or skin from the wing tips for a cleaner presentation.
Step 2
Place the prepared chicken wings (or drumettes) in a bowl and cover them with 1.5 cups of milk. Let them soak for 30 minutes to 1 hour. This soaking process is key to removing any unwanted gamey odor from the chicken.
Step 3
After soaking, drain the chicken wings (or drumettes) well using a colander. Gently pat them dry with paper towels to remove any excess moisture, which helps in achieving crispier skin.
Step 4
Season the dried chicken wings (or drumettes) with a pinch of salt and pepper. Then, generously sprinkle and coat both sides with the chili powder, cayenne pepper powder, dried thyme, and Cajun seasoning. Feel free to substitute with your favorite seasoning blends.
Step 5
Preheat your oven to 420°F (210°C). Arrange the seasoned chicken pieces in a single layer on an oven rack or baking sheet. Bake for 25-30 minutes, then flip the chicken pieces and bake for another 20 minutes, or until golden brown, crispy, and cooked through.
Step 6
While the chicken is baking, prepare the honey mustard sauce. In a small bowl, combine 1 Tbsp mustard, 1 Tbsp honey, 1.5 Tbsp mayonnaise, and a pinch of salt. Whisk together until smooth and well combined. Adjust the honey or mustard to your taste preferences.
