  • 3-4 Bay Leaves
  • A pinch of Whole Peppercorns

In a large pot, add enough water to fully cover the pork spare ribs. Include the washed green onion (1 stalk), peeled onion (1/2), bay leaves (3-4), and a pinch of whole peppercorns. These aromatics help remove any unwanted odors from the ribs and infuse them with flavor.

Once the water reaches a rolling boil, carefully place the prepared pork spare ribs into the pot. Boil over high heat for about 10 minutes, then reduce the heat to medium-low and simmer for a total of 30 minutes. Remove the ribs from the pot and let them cool slightly. While still warm, pat them dry with paper towels. Use kitchen shears or a knife to trim away any thick membranes, excess fat, or unsightly bits for a cleaner and more tender final dish.

Now, let’s make the special BBQ sauce! In a bowl, combine minced garlic (2 Tbsp), sugar (2 Tbsp), Tonkatsu sauce (5 Tbsp), oyster sauce (2 Tbsp), soy sauce (2 Tbsp), ketchup (3 Tbsp), vinegar (2 Tbsp), and a pinch of black pepper. Whisk everything together until smooth and well combined, ensuring there are no lumps. If the sauce seems too thick, you can add a tiny bit of water or broth.

Generously brush half of the prepared BBQ sauce onto both sides of the cleaned ribs. Place the sauced ribs in a single layer in your preheated air fryer basket (set to 180°C / 356°F). Air fry for 15 minutes. Flip the ribs halfway through or when the first side looks golden brown.

After 15 minutes, carefully remove the ribs from the air fryer. Brush the remaining BBQ sauce evenly over both sides, ensuring a good coating. Return the ribs to the air fryer and continue to cook at 180°C (356°F) for another 10 minutes. This second basting and cooking step will create a slightly caramelized, glossy finish while keeping the inside wonderfully moist.
