Introducing a magical one-pan pasta that’s incredibly easy to make, even for those living alone! We’ve loaded this dish with chewy king oyster mushrooms and sweet, seasonal autumn shrimp for an explosion of flavor and aroma. Perfect for a quick and satisfying meal without the fuss!
Ingredients- 1 serving of pasta (approx. 100g)
- King oyster mushrooms, as much as you like (generous portion)
- 4 fresh autumn shrimp (peeled and deveined)
- 2 Tbsp olive oil
- 3 pinches of salt (adjust to taste)
- 1/2 tsp black pepper
- 1 Tbsp soy sauce
- 5 cloves garlic (thinly sliced)
- 2-3 dried chili flakes (peperoncino) (adjust to taste)
Cooking Instructions
Step 1
First, bring a pot of water to a rolling boil and add 1 tablespoon of salt. Add your serving of pasta and cook for about 8 minutes, which is 1-2 minutes less than the package instructions. Be careful not to overcook the pasta; it should be al dente.
Step 2
Now, let’s prepare the ingredients that will add wonderful flavor to our pasta. We’ll use king oyster mushrooms, known for their satisfying chewiness, fresh autumn shrimp, and aromatic garlic. For the king oyster mushrooms, tear them by hand along the natural grain to enhance their texture. You can also use them whole if you prefer.
Step 3
In a sauté pan with high sides, heat 2 tablespoons of olive oil over medium-low heat. Add the thinly sliced garlic and 2-3 dried chili flakes. Gently sauté until the garlic is fragrant and lightly golden. This process mellows the chili’s heat and infuses the oil with a wonderful aroma. If you enjoy a spicier kick, feel free to add 3-4 chili flakes. Keep an eye on the garlic to prevent it from burning.
Step 4
Once the garlic is fragrant, add the torn king oyster mushrooms to the pan. Sprinkle with 1/2 teaspoon of black pepper and stir-fry until the mushrooms begin to soften. Mushrooms cook down significantly, so don’t be shy about adding a generous amount! Their earthy flavor will beautifully complement the olive oil.

When the mushrooms are somewhat cooked, add the prepared autumn shrimp to the pan. Stir-fry everything together until the shrimp turn pink and are fully cooked. Peeling the shrimp beforehand makes them much easier to eat. If the pan seems a bit dry, feel free to add a little more olive oil.

Now, add the pre-cooked pasta to the pan. Toss everything together to combine. At this stage, carefully pour 1 tablespoon of soy sauce into a corner of the pan and let it bubble and caramelize slightly. This adds a delightful depth of flavor. If the seasoning needs adjustment, you can add a touch more salt, or substitute with a dash of ‘Yeondu’ (Korean soup soy sauce) or oyster sauce.
