One-Pan Mentaiko Cream Udon

As the weather gets warmer, cooking can feel like a chore, right? And who wants to deal with a mountain of dirty dishes? That’s when a ‘one-pan meal’ recipe is a lifesaver! Today, I’m sharing a recipe for Mentaiko Cream Udon that you can enjoy all made in just one pan.

Ingredients

  • 1/2 Onion
  • 70g Mentaiko (Spicy cod roe)
  • 1/2 Tbsp Minced garlic
  • 150ml Milk
  • 150ml Heavy cream
  • 1 serving Udon noodles (frozen recommended)
  • 1/2 Tbsp Chicken stock (or a dash of soy sauce)

Cooking Instructions

First, finely dice the onion after washing and peeling it. Diced vegetables add so much more flavor when sautéed.

Gently rinse the mentaiko under running water to remove excess salt. Then, carefully cut it in half lengthwise and scoop out the roe with the back of a knife or a spoon. (Discard the roe casings.)

Heat 1-2 tablespoons of cooking oil in a wide frying pan over medium-low heat. Add the minced garlic and diced onion. Sauté until the onion becomes translucent and releases a sweet aroma, stirring occasionally to prevent burning.

Once the onions are well-sautéed, pour in the milk (150ml) and heavy cream (150ml). Once the sauce begins to simmer, reduce the heat slightly. Add about half of the mentaiko roe you extracted, stirring well to break it up and incorporate it into the sauce without clumps. Next, add the frozen udon noodles (1 serving) and stir continuously as it cooks, ensuring the noodles separate and absorb the creamy sauce.

When the udon noodles are tender and the sauce has thickened slightly, season with 1/2 tablespoon of chicken stock. (If you don’t have chicken stock, you can use soy sauce or salt to adjust the seasoning to your preference.) Stir everything together well to combine.

Transfer the cooked udon to a serving bowl. For a beautiful presentation, sprinkle with a pinch of paprika powder. Top with the remaining mentaiko roe, finely shredded nori seaweed, and chopped green onions. Your delicious and impressive one-pan Mentaiko Cream Udon is ready to enjoy!
