Omurice Filling

  • 1.5 to 2 bowls of warm cooked rice
  • 2 Tbsp finely diced zucchini
  • 3 Tbsp finely diced sausage
  • 2 Tbsp finely diced carrot
  • 1/2 Tbsp soy sauce
  • 3 Tbsp ketchup
  • A little cooking oil

Cooking Instructions

Step 1

First, prepare the ingredients for the fried rice filling. Finely dice the zucchini, sausage, and carrot. The smaller the dice, the better the vegetables will blend into the rice for a more enjoyable texture.

Heat a little cooking oil in a pan over medium-low heat. Add the diced zucchini, carrot, and sausage and stir-fry for about 2-3 minutes until the vegetables become translucent and the sausage releases its oils, enhancing their aroma.

Once the vegetables are partially cooked, add the warm cooked rice. Use a spatula to break up any clumps of rice and stir-fry with the vegetables for about 2 minutes, until the rice grains are separated and slightly toasted.

When the rice is nicely separated, add 1/2 Tbsp of soy sauce and 3 Tbsp of ketchup. Stir-fry for another 1-2 minutes, mixing well, to allow the sweet and tangy flavor of the ketchup and the savory taste of the soy sauce to permeate the rice, creating a delicious fried rice.

Now it’s time to make the star of the omurice: the egg omelet. In a bowl, crack 5 eggs and add a pinch of salt (about two pinches). Whisk thoroughly to break the yolks and strain any tough bits. Heat a pan lightly coated with cooking oil over very low heat. Pour in the whisked egg mixture and spread it thinly to create an egg crepe. The key is to keep the heat very low and cook just until the edges begin to set, preventing the egg from overcooking and becoming rubbery.
