  • 100g granulated sugar
  • 2 large eggs, at room temperature (approx. 100-120g total)
  • 2g baking powder (about 1/2 tsp)
  • 2g salt (about 1/3 tsp)
  • 10g corn syrup or liquid glucose (about 2 tsp)
  • 270g sweet red bean paste (anko), divided into 6 portions of 45g each

Hello everyone! Today, we’re going to make nostalgic, old-fashioned “Seng” doughnuts that the whole family will love, right in your own kitchen, and without needing an oven! First, let’s gather all the ingredients you’ll need!

In a large mixing bowl, place the softened butter (30g). Using a whisk, cream the butter until it’s smooth and fluffy. Ensure there are no lumps for a better texture.

Gradually add the granulated sugar (100g) to the creamed butter, in three additions. Whisk well after each addition until the sugar is fully incorporated. Adding it in stages prevents the butter from separating.

After adding the sugar in three parts and mixing thoroughly with the butter, you should have a light, fluffy, and slightly pale mixture. This indicates it’s ready for the next step.

Take one of the room-temperature eggs (ensure they’ve been out for at least 30 minutes to remove the chill) and add it to the butter-sugar mixture. Whisk until the egg is well combined. Adding cold eggs can cause the mixture to curdle.

Add the remaining egg and whisk again until everything is smoothly incorporated into the batter. Aim for a smooth, cohesive mixture without any separation.

While the dough is chilling, divide the sweet red bean paste (270g) into 6 equal portions of 45g each. Roll each portion into a smooth ball. Once the dough has chilled for 30 minutes, divide it into 6 equal portions of 50g each and roll them into balls as well.

Take one of the dough balls and flatten it into a disc shape, similar to a dumpling wrapper, using your palm. Place one ball of sweet red bean paste in the center of the flattened dough.

Carefully wrap the dough around the red bean paste, pinching the edges together to seal it completely. Ensure there are no gaps where the filling can escape during frying.

Once sealed, gently roll the filled dough between your palms to create a smooth oval shape, like a traditional “Seng” doughnut. Repeat this process with the remaining dough and filling. You can also make them round if you prefer!

Besides the oval shape, I also made some ring doughnuts! For these, simply omit the red bean paste. Roll the dough into a long rope, then shape it into a ring, sealing the ends. Any leftover dough can be used to make cute mini doughnuts!

Now, let’s get ready to fry! Pour about 500ml of canola or vegetable oil into a deep pot. Heat the oil over medium heat until it reaches 180°C (350°F). You can test this by inserting a wooden chopstick; if small bubbles form around it, the oil is ready. If you have a thermometer, use it to ensure accuracy.

Once the oil is at 180°C, carefully lower the shaped doughnuts into the hot oil, frying 2-3 at a time to avoid overcrowding the pot and lowering the oil temperature. Do not stir immediately; let the bottoms turn golden brown before gently flipping them. Continue frying until both sides are evenly golden brown. Maintain a medium-low heat to keep the oil temperature stable.

Voila! Our first two “Seng” doughnuts are ready! Transfer the fried doughnuts to a wire rack lined with paper towels to drain any excess oil. Fry the remaining doughnuts using the same method.
