  • 2 Chicken breasts (approx. 125g each)
  • 2 Tomatoes

Cooking Instructions

Step 1

First, rinse the two chicken breasts thoroughly and boil them in water for 10 minutes. This step isn’t to fully cook the chicken, but rather to thaw it, remove impurities, and drain any residual fat. Remove from water and set aside.

Step 2

Chop the two fresh tomatoes into bite-sized pieces. Cutting them into moderate sizes will result in a better texture when stir-fried.

Step 3

Slice the boiled chicken breasts into bite-sized pieces as well. Avoid cutting them too thickly so they can absorb the seasoning well and cook evenly.

Step 4

Place the sliced chicken breasts in a wok or a wide pan without any oil. Stir-fry over medium heat. The chicken’s own moisture will be sufficient for cooking.

Step 5

Once the chicken breast starts to turn golden brown, add the chopped tomatoes and stir-fry together. The tomatoes will begin to soften and release their natural juices.

Step 6

When the moisture from the tomatoes has reduced slightly and they are cooked, add 1 tablespoon of oyster sauce to enhance the umami flavor and continue stir-frying. Ensure the oyster sauce is evenly distributed.

Step 7

As the tomatoes become more tender, add 1/2 tablespoon of soy sauce to deepen the flavor and complete the stir-fry. Mix well to harmonize the saltiness of the soy sauce and the sweetness of the oyster sauce.

Step 8

Transfer the finished tomato chicken breast stir-fry to a serving plate. Finally, sprinkle some sesame seeds on top for a nutty aroma. This adds a touch of nuttiness that might be missed due to the lack of oil, but it’s optional.
