Octopus Mala Shrimp Fried Rice Dumpling Filling Ingredients

  • 1 pack Octopus Fried Rice
  • 1 pack Mala Shrimp Fried Rice
  • 1/2 block Tofu
  • A pinch of Chives (about two finger joints long)
  • 1/2 pack Bean Sprouts
  • 200g Ground Pork
  • 1 Tbsp Minced Garlic
  • 1 tsp Minced Ginger
  • 1 Egg
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 Tbsp Sesame Oil

Gondre Shrimp Fried Rice Dumpling Filling Ingredients

  • 1 pack Gondre Fried Rice
  • 1 pack Shrimp Fried Rice
  • 1/2 block Tofu
  • A pinch of Chives (about two finger joints long)
  • 1/2 pack Bean Sprouts
  • 200g Ground Pork
  • 1 Tbsp Minced Garlic
  • 1 tsp Minced Ginger
  • 1 Egg
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 Tbsp Sesame Oil

Cooking Instructions

Step 1

Prepare the fried rice for the dumpling filling. For the milder flavor, we’ll use one pack of Gondre Fried Rice and one pack of Shrimp Fried Rice. To ensure the rice is easy to mix and forms a good filling texture, transfer them from the freezer to the refrigerator the day before. Avoid microwaving them, as this can make the rice mushy. Using them cold is best.

Next, prepare the spicier fried rice components. Combine one pack of Octopus Fried Rice and one pack of Mala Shrimp Fried Rice. Similar to the first set, thaw them gradually in the refrigerator overnight. Do not microwave; keep them cold.

Finely chop the fresh chives. Rinse them thoroughly and then mince them as finely as possible. This will distribute their aromatic flavor evenly throughout the filling.

Rinse the bean sprouts and drain them well. Then, chop them finely, similar to the chives. These will add a pleasant crunch to the dumplings.

Prepare the ground pork. While fried rice alone makes a good filling, adding ground pork provides a richer, more satisfying texture and flavor to the dumplings.

Get your tofu and eggs ready. You’ll need half a block of tofu for each type of dumpling filling, totaling one block. The eggs will act as a binder, helping to hold the filling together and adding moisture. Prepare one egg for each filling bowl, so two eggs in total.

In a mixing bowl, add the ingredients for the spicier dumplings: the Octopus Fried Rice and Mala Shrimp Fried Rice. If you’re making the milder ones first, add those here.

In a separate bowl, add the ingredients for the milder dumplings: the Gondre Fried Rice and Shrimp Fried Rice. Keeping them separate makes combining the ingredients easier.

Divide the ground pork evenly between the two bowls of fried rice. You have a total of 400g, so add 200g to each bowl.

Add the finely chopped chives to each bowl. Their fresh, herbaceous aroma will enhance the overall flavor of the dumplings.

Add the chopped bean sprouts to each bowl. Their crispness will provide a delightful textural contrast.

Now, prepare the tofu. Lay the block of tofu flat and use the side of a knife or your hands to press down firmly and crumble it. Then, wrap the crumbled tofu in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. Pressing firmly will remove more water than simply squeezing by hand.

It’s crucial to remove all excess moisture from the tofu. Watery tofu will make the dumpling filling too wet, causing the dumplings to lose their shape and become mushy. Thoroughly draining the tofu is key to achieving firm, well-formed dumplings.

Add the thoroughly squeezed tofu to each of the prepared fried rice mixture bowls.

Season the fillings. Add 1 teaspoon of salt, 1 teaspoon of black pepper, 1 tablespoon of minced garlic, and 1 teaspoon of minced ginger to each bowl. Crack one egg into each bowl. If you wish to eliminate any gamey smell from the pork, you can add a splash of cooking wine, mirin, or soju. Finally, drizzle 1 tablespoon of sesame oil into each bowl for added fragrance.

Put on a pair of disposable gloves and mix everything thoroughly by kneading and squeezing the ingredients together until a cohesive mixture forms. Since fried rice lacks inherent stickiness, the egg and pork will help bind the filling as you knead. Continue mixing until the filling becomes slightly sticky and holds together well.

Shape the filling into dumplings. Place the shaped dumplings in a steamer basket over boiling water. Steam them until the ‘skin’ (the rice mixture) becomes translucent, indicating that the filling is cooked through.

To prevent the bottom of the dumplings from becoming soggy or sticking together, line your steamer with parchment paper. Once cooked, gently lift the parchment paper and invert the dumplings onto a serving plate. As the bottoms cool, they will naturally separate.
