- 0.5 Tbsp minced garlic
- 1/2 stalk green onion, finely chopped
- 1/2 red chili pepper, finely chopped
- 1 green chili pepper, finely chopped
- 1 Tbsp sesame oil
Oyster Preparation and Marination- 1 Tbsp cooking wine (mirin)
- Coarse sea salt, as needed
Cooking Instructions
Step 1
Place 2 cups of fresh oysters in a bowl. Add 1 tablespoon of coarse sea salt and gently rub them together, being careful not to mash the oysters. This process cleans the oysters and removes any unpleasant odor.
Step 2
Rinse the cleaned oysters in cold water 2-3 times until the water runs clear. Drain them thoroughly in a sieve. Ensuring the oysters are well-drained is key to concentrating their flavor.
Step 3
Add 1 tablespoon of cooking wine (mirin) to the drained oysters and gently mix. The mirin helps to eliminate any residual fishiness and enhances the oysters’ natural aroma. Let them marinate briefly.
Step 4
Finely chop the green onions, red chili, and green chili peppers that will go into the seasoning sauce. Wash them well and remove the seeds before chopping. These colorful peppers will add both flavor and visual appeal.
Step 5
In a mixing bowl, combine all the chopped ingredients. Add 4 tablespoons of soy sauce, 2 tablespoons of cooking wine (mirin), 1 tablespoon of red pepper flakes, 0.5 tablespoon of minced garlic, and 1 tablespoon of sesame oil. Stir well until everything is evenly mixed to create the delicious seasoning sauce. Adjust seasoning to your preference.
Step 6
Prepare the vegetables for the oyster rice. Slice the garlic into 2-3 pieces for better flavor infusion. Finely chop the green onion for aroma while the rice cooks. Dice the carrot finely for texture and a touch of sweetness.
Step 7
Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the roughly chopped garlic and sauté until golden brown and fragrant. Be careful not to burn the garlic; slow cooking will maximize its aroma, adding depth to the oyster rice.
Step 8
Once the garlic is fragrant, add the chopped green onion and diced carrot to the pan. Sauté together until the vegetables soften and release their natural sweetness. Cook until the vegetables are tender.
Step 9
Now, add the marinated oysters to the pan and stir-fry quickly over high heat. Oysters cook very fast; overcooking can release too much water and make them tough. Cook just until the oysters change color.
Step 10
Finally, stir in 0.5 tablespoon of sesame oil and a pinch of black pepper to taste. This completes the stir-fried oyster topping, adding a wonderful nutty aroma that complements the oysters beautifully.
Step 11
Serve warm cooked rice in a bowl. Top generously with the stir-fried oysters. Drizzle with the prepared seasoning sauce and mix before eating to complete your delicious homemade oyster rice! Enjoy! ^^
