Main Ingredients

  • 1 whole chicken, thoroughly cleaned
  • 6 fresh abalones
  • 2 live octopuses
  • 5 fresh shrimp

Cooking Instructions

Step 1

First, thoroughly wash the chicken inside and out. It’s important to trim any excess fat, especially from under the skin and near the cavity, to ensure a cleaner, more refreshing broth.

Step 2

For the fresh abalones, carefully separate the meat from the shell. Use a knife to remove the tough ‘beak’ or ‘teeth’ located at the bottom of the abalone. Gently scrub the dark parts of the abalone with a toothbrush for extra cleanliness.

Step 3

If using live octopus, submerge it in cold water until it calms down. Then, turn the head inside out to remove the innards and eyes. Wash the cleaned octopus generously with flour; this helps remove any slimy residue, making it wonderfully plump and tender. Rinse thoroughly under running water.

Step 4

Rinse the shrimp thoroughly with their shells on. Trim the long antennae with scissors for easier eating and a neater presentation. You can also remove the sharp pointy part of the head for added safety.

Step 5

Place the prepared chicken in a large pot and add enough water to cover it completely. Add the green tea powder, black pepper, salt, and minced garlic. Bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer until the chicken is tender and fully cooked (approximately 30-40 minutes).

Step 6

Once the chicken is tender, add the prepared abalones and shrimp to the pot. Be careful not to overcook the seafood, as it can become tough. Cook just until the abalone firms up and the shrimp turn pink and opaque (about 5-7 minutes).

Step 7

Finally, add the prepared octopus to the pot. Cover and cook briefly – just until the octopus turns bright red and is cooked through. Overcooking the octopus will make it chewy, so be sure to cook it for only a short time! Enjoy your delicious and invigorating Haesintag while it’s hot!
