I fondly remember trying Gogi-ri Makguksu for the first time and becoming so enamored with it that I ate perilla oil noodles almost constantly for a while! Now, whenever I crave something like cold noodles or don’t feel like having a heavy meal, I often make this at home. It’s a simple and delicious dish that comes together in just 5 minutes! As long as you have buckwheat noodles on hand, you can easily make this with ingredients you likely already have. Follow our recipe, and be sure to try making these delightful noodles yourself!
Main Ingredients- Buckwheat noodles 150g (per serving)
- Seasoned seaweed laver (gim) 8g (adjust to taste)
- Toasted sesame seeds, generous amount
Special Perilla Oil Noodle Sauce- Rich perilla oil 4 Tbsp
- Savory soy sauce 3 Tbsp
- Sweetener (sugar) 2 Tbsp
- Tangy vinegar 0.5 Tbsp
- Black pepper, to taste

Cooking Instructions
Step 1
First, bring a pot of water to a boil and cook the buckwheat noodles for about 3-4 minutes. Once the noodles are cooked to your liking, rinse them thoroughly under cold running water to remove excess starch and drain well. This step helps to make the noodles more chewy and resilient.
Step 2
While the noodles are cooking, let’s prepare the delicious perilla oil noodle sauce. In a small bowl, combine 4 tablespoons of rich perilla oil, 3 tablespoons of savory soy sauce, 2 tablespoons of sugar for sweetness, and 0.5 tablespoon of tangy vinegar. Whisk everything together until well combined. Finish with a pinch of black pepper for an extra layer of flavor.
Step 3
Grind the toasted sesame seeds using a mortar and pestle until finely crushed. This process releases a deeper nutty aroma and flavor. If you don’t have a mortar and pestle, you can also use the sesame seeds whole.
Step 4
Using scissors, thinly shred the seasoned seaweed laver. Aim for very fine, hair-like strands, as this will provide a pleasant texture and distribute evenly throughout the noodles.
Step 5
Now it’s time to assemble your delicious noodles! Place the drained buckwheat noodles in a serving bowl. Sprinkle the finely shredded seaweed laver and the ground sesame seeds generously over the noodles. Finally, pour the prepared perilla oil sauce evenly over the top. Using chopsticks, toss everything together until the noodles are well coated with the sauce. Enjoy your homemade perilla oil noodles! You can also serve them with kimchi or pickled radish for extra flavor.
