Ingredients (Makes about 20 cookies)- 135g Whole Wheat Flour
- 2g Baking Powder
- 2g Baking Soda
- 125g Rolled Oats
- 110g Unsalted Butter, softened
- 100g Sugar (granulated or unrefined)
- 1g Salt
- 1 Large Egg, room temperature
- 1 tsp Vanilla Extract
- 40g Toasted Pecans, coarsely chopped
- 40g Toasted Almonds, coarsely chopped
- 50g Milk Couverture Chocolate, coarsely chopped
- 80g Milk Chocolate Chips
Cooking Instructions
Step 1
First, coarsely chop the toasted pecans and almonds using a knife or a food processor. Avoid grinding them too finely to maintain a pleasant texture. Similarly, coarsely chop the milk couverture chocolate.
Step 2
Place the rolled oats in a food processor and pulse a few times until coarsely ground. This helps them incorporate better into the cookie dough and improves the texture.
Step 3
In a large bowl, sift together the whole wheat flour, baking soda, and baking powder. Add the coarsely chopped pecans, almonds, couverture chocolate, and the ground oats to the bowl.
Step 4
Using a spatula or whisk, gently mix these dry ingredients together until they are well combined and there are no clumps.
Step 5
In a separate bowl, cream the softened unsalted butter until smooth. You can use an electric mixer or a whisk for this. Add the sugar and salt, and beat until the mixture is light and fluffy, resembling pale yellow ribbons.
Step 6
Gradually add the room temperature egg to the butter mixture, beating well after each addition to prevent the batter from separating. Add the vanilla extract and mix until fully incorporated. (Tip: Using half unrefined sugar can add a lovely depth of flavor and health benefits to your cookies.)
Step 7
Add the flour and nut mixture from step 3 to the creamed butter mixture. Also, add the milk chocolate chips. Using a spatula, gently fold everything together until just combined. Be careful not to overmix, as this can result in tough cookies.
Step 8
You will notice that the cookie dough is quite thick at this stage. This is the perfect consistency for shaping.
Step 9
Portion the dough into roughly 35g balls. Roll them into neat spheres and place them on a baking sheet lined with parchment paper, leaving some space between each cookie. Gently press down on each ball with your palm or the bottom of a glass to flatten them slightly. Alternatively, an ice cream scoop can be helpful for portioning uniform sizes.
Step 10
Bake in a preheated oven at 180°C (350°F) for 10-15 minutes, or until the cookies are golden brown. Baking time and temperature may vary depending on your oven, so keep an eye on them. Once baked, remove the cookies from the oven and let them cool completely on a wire rack for maximum crispiness. Enjoy your delicious homemade nutty oatmeal whole wheat cookies!
