Nutritious Fried Rice Packed with Nuts
I accidentally discovered that stir-frying rice with nuts and gochujang was incredibly delicious, and it quickly became a go-to dish! The delightful textural contrast of the crunchy nuts and crisp onions makes this fried rice a truly fun and flavorful meal. Enjoy this simple yet nutritious treat!
Main Ingredients- 1/2 medium onion, thinly sliced
- 1 serving of cooked rice (warm)
- 1 handful of your favorite nuts (walnuts, almonds, cashews, etc.), finely chopped
- 1 stalk of green onion or scallion, finely chopped (optional)
Seasoning & Others- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp cooking oil or olive oil
- 1/2 Tbsp onion powder (for enhanced flavor, optional)
- A drizzle of sesame oil

Cooking Instructions
Step 1
First, take half an onion and slice it thinly into strips. The thickness of your slices can affect the texture, so feel free to adjust them to your preference.

If you have green onions or scallions, prepare about one stalk. Wash them thoroughly and chop them finely. The aromatic flavor of the scallions will enhance the fried rice, but you can skip this step if they’re unavailable.

Gather your nuts – about a handful is good. Choose your favorites like walnuts, almonds, or cashews. Chop them into small, bite-sized pieces so they mix well with the rice.

Now, heat a frying pan over medium-low heat. Once the pan is warm, add about 1 tablespoon of cooking oil or olive oil.

Add the chopped green onions to the warm pan and stir-fry them gently over low heat to infuse the oil with their aroma. This process creates ‘scallion oil,’ which is crucial for boosting the fried rice’s flavor.

Once the scallion aroma is released, add the sliced onions to the pan. Turn the heat up to medium and stir-fry until the onions become translucent. They will soften and release their natural sweetness.

When the onions are tender, add the chopped nuts and stir-fry them together for about a minute until they become slightly fragrant and toasted.

Finally, add the warm cooked rice (about 1 serving). Use a spatula to break up any clumps and stir-fry everything together until well combined.
