Nutty Carrot Cake Delight
Easy No-Oven, No-Butter Carrot Cake Made in a Rice Cooker!

Whip up a wonderfully simple cake at home! With just a rice cooker, no oven, and no butter needed, you can create the ultimate snack: a delicious Walnut Carrot Cake. Perfect for a healthy treat everyone will love.
Cake Batter Ingredients- 400g Hotcake Mix (approx. 2 cups)
- 2 large Eggs
- 50-60ml Milk
- 2/3 medium Carrot
- 5 Walnuts
- A pinch of Cinnamon Powder
- A handful of Raisins
- A tiny pinch of Salt
Cooking Instructions
Step 1
First, let’s prepare the walnuts for a lovely nutty flavor. Take 5 walnuts and finely chop them using a knife. It’s best to chop them to a size that offers a pleasant chew, rather than making them into a powder.

Step 2
The carrot is key to the cake’s moistness and natural sweetness. Wash and peel about 2/3 of a medium-sized carrot. Cut it into manageable pieces and place it in a food processor or chopper to finely grate or mince it. A blender can also work.

Step 3
Now, it’s time to make the cake batter. In a large mixing bowl, add 200g of hotcake mix (about 2 cups). Crack in 2 large eggs and add a tiny pinch of salt. The salt helps to enhance the overall sweetness.

Step 4
Getting the batter consistency right is important. Measure out 50-60ml of milk. Gradually pour the milk into the hotcake mix and egg mixture while stirring. Aim for a smooth, pourable batter – not too thick and not too thin.

Now, fold in the prepared ingredients. Add a pinch of cinnamon powder for warmth and aroma. Stir in the minced carrot and a handful of raisins. Finally, add the chopped walnuts. Mix everything gently until well combined to complete the batter.

We’ll be using your rice cooker to bake the cake! Lightly grease the inside of the rice cooker pot to prevent sticking. Carefully pour the batter into the greased pot and smooth the top. Select the ‘Bake’ or ‘Cake’ mode on your rice cooker and cook for approximately 40 minutes.

Step 7
After 40 minutes, the cooking cycle will finish. Carefully open the rice cooker and check if the cake is fully baked by inserting a skewer or toothpick; it should come out clean.
