Ingredients

  • 1 block Tofu (approx. 300g)
  • 1 Egg
  • 2.5 to 3 cups All-Purpose Flour (adjust based on dough consistency)
  • 1/3 cup Black Sesame Seeds
  • 1/2 cup Sugar
  • 1/3 tsp Salt
  • 5 Tbsp Olive Oil (or vegetable oil)

Cooking Instructions

First, gather all the ingredients for the recipe. You will need: 1 block of tofu, 1 egg, 2.5 to 3 cups of all-purpose flour, 1/3 cup of black sesame seeds, 1/2 cup of sugar, 1/3 teaspoon of salt, and 5 tablespoons of olive oil or vegetable oil.

Place the block of tofu in a large bowl. Use your hands to mash the tofu thoroughly until it’s smooth and lump-free. Do not drain any liquid from the tofu; it will be incorporated into the dough. This helps to make the dough more moist.

To the mashed tofu in the bowl, add about 2.5 cups of all-purpose flour. You can adjust the amount of flour slightly depending on the dough’s consistency. Next, add 1/3 cup of black sesame seeds for that wonderful nutty flavor, and 1/2 cup of sugar for sweetness. Feel free to adjust the amount of black sesame seeds and sugar to your personal taste preferences. More sesame for nuttiness, more sugar for sweetness!

Now, add 5 tablespoons of olive oil or vegetable oil to enhance the dough’s richness and contribute to a crispier texture. Also, add 1/3 teaspoon of salt to balance the flavors.

For an extra nutty and sweet flavor, I’ve used a generous amount of black sesame seeds and sugar today. However, if you prefer a more subtle taste, feel free to reduce them. Lastly, crack in 1 egg. The egg will help bind the dough together nicely.

Mix and knead all the ingredients together until they form a cohesive dough. The ideal consistency for this dough is similar to that of dough for ‘sujebi’ (Korean hand-pulled dough soup) – soft but not overly sticky. If the dough feels too wet, gradually add more flour until it reaches the right consistency. Once the dough is ready, wrap it tightly in plastic wrap or place it in a resealable bag and refrigerate for about 30 minutes. This chilling period makes the dough firmer and easier to handle.

After the 30-minute chilling period, take the dough out of the refrigerator. Lightly dust your work surface or a cutting board with flour to prevent the dough from sticking. Place the chilled dough on the floured surface and use a rolling pin to spread it out evenly.

For the best crispy texture, aim to roll the dough to a thickness of about 0.1 cm (approximately 1/32 inch). Rolling it very thin is key to achieving a perfectly crunchy snack. If it’s too thick, it might turn out chewy or soft.

Using a knife, cut the thinly rolled dough into bite-sized pieces. You can cut them into squares, rectangles, or any shape you prefer.

While you can bake these in an oven, today we’ll be making them on the stovetop using a frying pan. Heat a generous amount of cooking oil in a frying pan over medium-low heat.

Carefully place the cut dough pieces into the preheated oil. Fry them, flipping occasionally, until they are golden brown and crisp on both sides. Keep an eye on the heat to prevent them from burning. They are ready when they achieve a lovely golden hue.
