First, let’s toast the nuts to enhance their flavor and crispiness. Heat a dry pan over low heat. Add the mixed nuts and stir-fry for about 2-3 minutes until fragrant and slightly golden, being careful not to burn them. Once toasted, transfer the nuts to a separate bowl to cool down. This step ensures they remain delightfully crunchy even after being stir-fried with other ingredients.

Now, let’s prepare the anchovies to remove any fishy smell and achieve a pleasant crispness. Using the same dry pan, heat it over medium-low heat. Add the small anchovies and stir-fry for 2-3 minutes. This process helps to dry out any moisture and get rid of the ‘fishy’ odor, making them lighter and crisper. Keep stirring to prevent them from burning.
