The key to this dish is to enhance the nuts’ aroma and eliminate the anchovies’ fishy smell. First, toast the sunflower seeds and walnuts in a dry pan over low heat until they are lightly fragrant, being careful not to burn them. Once toasted, remove them from the pan and let them cool. This process removes any raw taste and deepens their flavor. Next, gently pat the dried anchovies with a paper towel to remove any dust or crumbs. In a separate dry pan, stir-fry the anchovies over low heat until they are lightly golden and fragrant. Once the fishy smell has dissipated, sieve them through a fine mesh to remove any remaining powder. This ensures a clean taste in your stir-fry.

Step 2

Now, let’s prepare the delicious sauce. In the pan, combine 2 Tbsp cooking oil, 1 Tbsp soy sauce, and 2 Tbsp oligosaccharide over low heat. Stir well until combined. Once the mixture begins to simmer gently, add the toasted walnuts and sunflower seeds. Toss them gently to coat evenly with the sauce.
