  • 1 block firm tofu (approx. 300g)
  • 3 Tbsp sweet corn kernels
  • 1/4 bell pepper (using different colors makes them more appealing)
  • 2 stalks green onion (mostly white parts)
  • 2 eggs
  • 2 Tbsp glutinous rice flour (optional, can substitute with pancake mix or all-purpose flour)

First, I’ll prepare the vegetables and tofu that will add flavor to the patties. The ingredients you’ll need are tofu, sweet corn kernels, bell pepper, green onion, eggs, and glutinous rice flour.

Wash the green onions and bell pepper thoroughly. Then, use a blender or food processor to finely mince them. If the vegetables are too large, the patties might not hold their shape well, so mincing them finely is recommended.

Drain the tofu by placing it in a sieve, or press it firmly with paper towels to remove as much moisture as possible. If the tofu has too much water, the mixture can become too soft, so this step is crucial.

Place the drained tofu in a bowl. Add the finely minced green onion and bell pepper, along with the sweet corn kernels. Gently mix everything together with your hands until well combined. Make sure to drain the canned corn thoroughly before adding it.

Now it’s time to season the mixture. Add a pinch of salt and pepper to taste. Whisk the eggs and add them to the bowl. Then, add the glutinous rice flour (or pancake/all-purpose flour) to achieve the right consistency. Mix again until all the ingredients are well incorporated and the mixture is cohesive.

Heat a frying pan with a generous amount of cooking oil. Using a spoon, scoop portions of the mixture and place them in the pan, shaping them into round, flat patties, similar to traditional ‘donggeurangttaeng’. Don’t make the patties too thick, or they might take a long time to cook through.

Cook over medium-low heat, flipping them over, until they are golden brown on both sides. Cooking them slowly over low heat prevents them from burning and ensures they cook evenly inside. Once one side is golden, flip and cook the other side the same way.
