How to Make Easy and Nutritious Sweet Rice Cake (Soe-meori Tteok)
Make this visually appealing and delicious nutritious sweet rice cake easily at home! It’s also called ‘Soe-meori Tteok’ because its unique pattern resembles beef head meat. The chewy glutinous rice flour combined with sweet beans, chestnuts, dates, and dried pumpkin adds a rich flavor. It’s perfect for special occasions or as a delightful snack.
Cake Ingredients- 500g Wet glutinous rice flour
- 100g Soaked soy beans (Seoritae)
- 5 Dried dates
- 5 Peeled chestnuts
- 20g Dried pumpkin strips
Seasoning & Others- 5g Salt (approx. 1 tsp)
- 50g Sugar (approx. 4 Tbsp)

Cooking Instructions
Step 1
First, prepare your steamer. Fill a larger steamer pot with more than half water and a smaller pot to be placed at the bottom with about one-third water. Start heating both on high heat.
Step 2
Prepare all the additional ingredients. (1) Once the water in the smaller pot boils, add the soaked soy beans and a pinch of salt. Boil for 10 minutes, then rinse with cold water and drain thoroughly. Pat dry with paper towels to remove excess moisture. (2) Soak the dried pumpkin strips in lukewarm water until they are tender but still slightly chewy. Squeeze out excess water and cut into bite-sized pieces. (3) Lightly wash the dried dates, remove the pits, and then slice them into appropriate sizes. (4) Slice the peeled chestnuts thinly into rounds.
Step 3
Sift the glutinous rice flour into a bowl and mix in the salt. Gradually add about 2 tablespoons of cold water, mixing until the dough just starts to hold its shape when squeezed into a fist. Be careful not to make it too wet or too dry, as this will affect the final texture.
Step 4
Line your steaming sieve (siru) generously with a damp cheesecloth. Sprinkle about three pinches of sugar evenly over the cheesecloth. Now, arrange the decorative ingredients for the cake: chestnuts, dates, dried pumpkin, and soy beans. Place these ingredients along the edges of the cheesecloth, with the best-looking side facing down, to create a beautiful pattern on the outside of the cake.
Step 5
In a separate bowl, mix the remaining glutinous rice flour dough with the reserved ingredients (chestnuts, dates, dried pumpkin, soy beans) and 50g of sugar. Gently combine. Carefully pour this mixture into the steaming sieve over the arranged ingredients. Add the mixture generously, filling from the top to avoid disturbing the bottom layer. Level the top surface of the dough. Fold the edges of the damp cheesecloth over the dough, bringing the opposite corners together. Cover with the sieve lid and steam for 30 minutes.
Step 6
While the cake is steaming, prepare for wrapping. Carefully open a large plastic bag, either by cutting one side or both sides to create a wider surface. Lightly grease the inside of the plastic bag with cooking oil. Once the cake is steamed, carefully remove it from the sieve and the cheesecloth. Place the steamed cake onto the prepared plastic sheet. Using a scraper or a flat spatula, gently press and shape the cake into a neat rectangle. Cover the shaped cake with a damp cloth to prevent it from drying out as it cools.
