Easy Steamed Fish and Shiitake Mushroom Rice Made in a Rice Cooker

Nutritious Steamed Fish and Shiitake Mushroom Rice

This is a hearty and nutritious meal made with mild white fish and aromatic shiitake mushrooms cooked together with rice. Create a wonderful dish with just your rice cooker.

Main Ingredients

  • 2 pieces of white fish (approx. 200-300g)
  • 1 cup rice (measuring cup)
  • Water (for cooking rice, usual amount)
  • 2 shiitake mushrooms
  • 1 Tbsp soup soy sauce

Seasoning Sauce Ingredients

  • 2 Tbsp soy sauce
  • 0.5 tsp red pepper flakes
  • 1/4 tsp garlic powder
  • 1 tsp sesame oil
  • Minced green onion, to taste
  • Toasted sesame seeds, to taste

Cooking Instructions

Prepare the Fish: You can use thawed frozen fish or fish directly from frozen. White fish that are not too oily are recommended, such as sole, snapper, ribbon fish, perch, parrot fish, butter fish, or grouper. Prepare about 100-150g of fish pieces per serving.

Measure the Water for Rice: Rinse 1 cup of rice thoroughly. Add the usual amount of water you use for cooking 1 cup of rice to your rice cooker. You don’t need to add extra water because of the fish and mushrooms.

Prepare the Shiitake Mushrooms: If using dried or semi-dried shiitake mushrooms, soak them in water for a short while until they become pliable enough to cut. Cut 2 shiitake mushrooms into bite-sized pieces using scissors and add them to the rice cooker.

Season the Rice Water: Add 1 tablespoon of soup soy sauce to the rice water. Using soup soy sauce provides a subtle and delicious savory flavor to the rice, which is better than regular soy sauce for this dish.

Place Fish and Start Cooking: Arrange the prepared fish pieces on top of the rice and water in the rice cooker. Select the ‘standard cook’ or ‘quick cook’ setting on your rice cooker and start cooking. It’s okay if the fish is not completely submerged in water.

Make the Seasoning Sauce: While the rice is cooking, prepare the seasoning sauce. In a small bowl, combine 2 Tbsp soy sauce, 0.5 tsp red pepper flakes, 1/4 tsp garlic powder, 1 tsp sesame oil, minced green onion, and toasted sesame seeds. Mix well. This sauce is incredibly delicious when mixed with the rice. If you have sushi nori (seaweed sheets), you can also wrap the rice in it for an extra treat.

Rice is Ready: Your delicious steamed fish and shiitake mushroom rice is now complete from the rice cooker. The rice should be fluffy, and the fish should be perfectly steamed and moist.
