Much like a hearty Korean steamed egg dish (‘gyeran-jjim’), it’s a perfect way to use up leftover vegetables from your fridge. In this recipe, we’ll focus on fresh spinach, sweet tomatoes, and aromatic onions as the main ingredients, but feel free to add other vegetables like mushrooms if you have them on hand. What makes this Spinach Frittata even more appealing is that it can be easily prepared in a skillet as well as an oven! Let’s get started with the detailed recipe.
Ingredients- 12 roots fresh spinach
- 1/2 ripe tomato (or 5-6 cherry tomatoes)
- 1/2 medium onion
- 50g canned ham (or sliced bacon)
- 1 tablespoon butter
- 50g mozzarella cheese (adjust to taste)
- 4 fresh eggs
- 100ml milk
- Salt to taste
- Freshly ground black pepper to taste
Cooking Instructions
Step 1
This recipe yields 3-4 servings. First, prepare about 12 roots of fresh spinach. Wash them thoroughly under running water to remove any dirt, and trim off the tough root ends.

Next, prepare the other ingredients. You’ll need 1/2 ripe tomato, 1/2 medium onion, and 50g of canned ham (or an equivalent amount of sliced bacon).

Dice the 1/2 tomato into bite-sized pieces, about 1cm in size. If using cherry tomatoes, simply halve them.

Thinly slice the 1/2 onion into strips. Cutting them slightly thicker prevents them from burning too quickly during sautéing.

Dice the canned ham or bacon into bite-sized pieces as well.

Melt 1 tablespoon of butter in a skillet over medium heat. The butter will add a wonderful richness to the dish.

Once the butter is melted, add the diced ham (or bacon) and sliced onions to the skillet. Sauté until the onions become translucent and the ham releases some of its fat.

When the onions and ham are nicely sautéed, add the prepared spinach. Stir-fry just until the spinach wilts and softens, then immediately turn off the heat. Overcooking the spinach can diminish its fresh flavor.

In a mixing bowl, crack 4 fresh eggs. Add a pinch of salt and some freshly ground black pepper. Pour in 100ml of milk for a smoother texture and whisk everything together until well combined to create the egg mixture. Taste and adjust the seasoning as needed.

Transfer the sautéed spinach, ham, and onion mixture into an oven-safe skillet or baking dish. Arrange the diced tomatoes evenly over the mixture. Finally, pour the prepared egg mixture over everything, ensuring it fills the gaps between the ingredients.

Sprinkle a generous amount of mozzarella cheese over the top, according to your preference. The melted cheese will enhance the flavor and create a beautiful golden-brown finish.

Bake in a preheated oven at 190°C (375°F) for about 15-20 minutes, or until the eggs are fully set and the cheese is golden and bubbly. (If using a skillet, cook over low heat with a lid for about 15-20 minutes, then you can briefly broil the top or flip it to finish.)
