Nutritious Siraegi Doenjang Stir-fry Recipe

Main Ingredients
- 200g prepared dried radish greens (Siraegi)
- 1/3 stalk green onion
- 15 small dried anchovies (for broth)
Seasoning Ingredients
- 1 Tbsp soup soy sauce (Guk-ganjang)
- 2 Tbsp perilla oil (Deulgireum)
- 1.5 Tbsp perilla powder (Deulkkae garu)
- 1 Tbsp soybean paste (Doenjang)
- 1 Tbsp red pepper flakes (Gochugaru)
- 1 Tbsp plum extract (Maesil-aek)
- 0.5 Tbsp tuna extract (Chamchi-aekjeot)
- 1 Tbsp soup soy sauce (Guk-ganjang)
- 2 Tbsp perilla oil (Deulgireum)
- 1.5 Tbsp perilla powder (Deulkkae garu)
- 1 Tbsp soybean paste (Doenjang)
- 1 Tbsp red pepper flakes (Gochugaru)
- 1 Tbsp plum extract (Maesil-aek)
- 0.5 Tbsp tuna extract (Chamchi-aekjeot)
Cooking Instructions
Step 1
First, cut the prepared dried radish greens (Siraegi) into bite-sized pieces. In a large bowl, combine the chopped Siraegi with 1 Tbsp soup soy sauce, 2 Tbsp perilla oil, 1 Tbsp soybean paste, 1 Tbsp red pepper flakes, 1 Tbsp plum extract, and 0.5 Tbsp tuna extract. Mix well with your hands until the seasoning is evenly distributed and the Siraegi is thoroughly coated.
Step 2
Heat a dry pan over medium heat. Add 1.5 Tbsp of perilla powder and stir-fry gently until it becomes fragrant. You’ll notice a nutty aroma developing. Be careful not to burn it; just toast it lightly.
Step 3
Add the seasoned Siraegi to the pan with the toasted perilla powder. Stir-fry over medium-high heat for about 1-2 minutes, just until the Siraegi is slightly cooked and its flavors start to meld. Then, pour in 200-300ml of water and bring it to a simmer.
Step 4
Place the 15 small dried anchovies in the microwave for about 30 seconds. This helps to reduce any fishy smell and enhances their savory flavor. Add the warmed anchovies to the simmering Siraegi and cook together until the liquid has reduced and the mixture is somewhat soupy, about 5-7 minutes.
Step 5
Finally, add 0.5 Tbsp of minced garlic and the thinly sliced green onion. Stir-fry for another minute until fragrant. Once all the ingredients are well combined and the wonderful aroma fills your kitchen, your delicious Siraegi Doenjang Stir-fry is ready! Serve hot with rice.
