Basic Ingredients (Serves 1)

  • 1 bowl of warm cooked rice
  • 1 Tbsp cooking oil
  • 1/2 carrot (approx. 50g)
  • 1-2 Tbsp pollack roe (adjust to taste)
  • A small amount of chopped green onions or chives (optional)
  • 1 sheet of roasted seaweed (gim)

Cooking Instructions

Prepare all ingredients thoroughly. Peel and finely mince the carrot. Carefully remove the membrane from the pollack roe, then separate the roe into individual grains, similar to rice grains. Using tube-type pollack roe will make preparation much easier. If using green onions or chives, chop them finely.

Heat a wide pan over medium-low heat and add 1 tablespoon of cooking oil. Once the oil is warm, add the minced carrot and pollack roe. Sauté for about 2-3 minutes until the ingredients are tender. It’s important to sauté them together so the carrot’s sweetness and the pollack roe’s umami meld.

Add 1 bowl of warm cooked rice to the sautéed carrots and pollack roe. Use a spatula to gently break up any clumps of rice and stir-fry. If you’re using cold or frozen rice, microwave it for 30 seconds to 1 minute before stir-frying. This helps prevent the rice from clumping and ensures it fries up fluffy. Continue to stir-fry for about 2-3 minutes until the rice is nicely separated.

Add the chopped green onions or chives and stir-fry briefly. The aromatic flavor of the onions or chives will further enhance the taste of the fried rice. Sauté for about 30 seconds just to release their fragrance.

Finally, crumble the roasted seaweed sheet with your hands or cut it into small pieces with scissors, and gently mix it into the fried rice. The nutty aroma of the seaweed will further elevate the overall flavor.
