Even if you don’t have udon noodles, you can easily make this delicious dish using kalguksu (Korean knife-cut noodles) noodles you might have at home! Main Ingredients

  • 1 serving Kalguksu noodles
  • 1 pack Natto
  • Some seasoned seaweed flakes
  • Scallions or green onions (julienned), some
  • 1 Egg yolk

Dressing

  • 1.5 Tbsp Tsuyu (or soy sauce)
  • A little sesame oil (optional)

Cooking Instructions

Step 1

In a large pot, bring plenty of water to a rolling boil. Once boiling, add the kalguksu noodles and cook for about 8 minutes, depending on the thickness of the noodles. (If using pre-cooked udon noodles, cook for only about 2-3 minutes.) Once cooked, drain the noodles.

Before opening the natto packet, gently shake it to clump the beans together. Add the included sauce and mustard, then vigorously stir with chopsticks for about 30-50 times. The more sticky and frothy it becomes, the more delicious and flavorful it will be. You can also use fresh cheonggukjang (fermented soybean paste) instead of natto.

Quickly rinse the cooked kalguksu noodles under cold water to remove excess starch and drain them thoroughly. Place the noodles in a large bowl and add 1.5 tablespoons of tsuyu. (You can substitute with soy sauce, and add a little sugar if you prefer sweetness.) Put on disposable gloves and gently mix the noodles with the tsuyu, ensuring it’s evenly coated. It’s important for the seasoning to penetrate the noodles well.

Arrange the seasoned noodles attractively in a serving bowl. Top with the prepared natto, julienned scallions (or green onions), crumbled seasoned seaweed flakes, and the egg yolk. Admire the presentation before mixing everything! Before eating, mix all the ingredients well with chopsticks and enjoy. A drizzle of sesame oil will further enhance the aroma.
