Main Ingredients
  • 2 medium-sized potatoes
  • 6 hard-boiled eggs
  • 3 Tbsp cream cheese
  • 2-3 fresh lettuce leaves
  • 2-3 morning buns
  • 50g imitation crab meat (kani)

Seasoning & Spices
  • 2 tsp salt
  • 3 Tbsp sugar
  • 1 tsp dried parsley flakes
  • 1 Tbsp honey
  • Pinch of black pepper

Cooking Instructions

Step 1

First, peel the skin off two medium-sized new potatoes and dice them into bite-sized cubes. Place the diced potatoes in a pot, add enough water to cover them, then add 1 tsp of salt and 1 Tbsp of sugar. Boil until the potatoes are tender, which should take about 15-20 minutes.

Step 2

Next, prepare your 6 hard-boiled eggs. (While ‘baked eggs’ offer a chewier texture, regular boiled eggs provide a softer consistency. The egg whites from baked eggs are chewier, while regular boiled eggs are softer – feel free to choose based on your preference.)

Step 3

Drain the boiled potatoes well in a colander. It’s best to mash them while they’re still warm. Halve the hard-boiled eggs. Mash the yolks with the cooked potatoes. Finely chop the egg whites and set them aside.

Step 4

Shred the imitation crab meat (kani) and then finely chop it. This will add a delicious flavor to your salad.

Step 5

To the mashed potato and yolk mixture, add 3 Tbsp of cream cheese and 1 tsp of salt. Mix well. *If you don’t have cream cheese, you can substitute it with mayonnaise in the same amount for a delicious alternative.

Step 6

Now, add the chopped egg whites and chopped imitation crab meat to the bowl. Stir in 1 Tbsp of honey, 2 Tbsp of sugar, and a pinch of black pepper. Finally, sprinkle in 1 tsp of dried parsley flakes. Mix everything thoroughly until well combined. *If you don’t have parsley flakes, you can omit them.

Step 7

Carefully slice the morning buns in half horizontally using a knife. Wash the lettuce leaves and trim them to about one-third the size of the morning bun’s opening.

Step 8

Place a piece of trimmed lettuce inside each halved morning bun to act as a base. Generously spoon the prepared potato salad on top of the lettuce. This layer helps prevent the bun from becoming soggy and adds a crisp texture.

Step 9
