Ingredients- 250g fresh beef liver
- 50g onion
- Milk, for soaking
- 0.5 tsp salt
- A pinch of black pepper
- 1 Tbsp sesame oil

Step 1
Start with 250g of fresh beef liver. Cut it into large, manageable pieces. Gently peel off the thin membrane covering the liver using your fingertips or a knife. This step is crucial for achieving a tender texture.

To remove any gamey odor and blood, soak the cleaned liver in milk. Cover with plastic wrap or place in an airtight container, and refrigerate for 30 minutes. The milk will help draw out impurities and neutralize the smell.

Rinse the liver thoroughly under cold water to remove all traces of milk and blood. Next, use kitchen scissors to cut the liver into bite-sized pieces. Liver can be tough, so scissors are often easier to use than a knife.

Now, let’s use your rice cooker. Spread the cut liver pieces evenly in the bottom of the rice cooker inner pot, ensuring they don’t overlap too much. Thinly slice or chop 50g of onion and spread it over the liver. Sprinkle with 0.5 tsp salt, a pinch of black pepper, and 1 Tbsp sesame oil. Gently mix everything with your hands to distribute the seasonings evenly. Once mixed, spread the ingredients out again in a single layer in the pot.
