Oyster Pot Rice Ingredients

  • 2 cups rice (approx. 360g)
  • 2 cups water (approx. 400ml)
  • 1/4 medium radish (approx. 150g)
  • 1 packet fresh oysters (approx. 200g)

Fragrant Scallion Soy Sauce Seasoning

  • 1 handful fresh Korean scallions (ae-reum, approx. 50g)
  • 1 red chili pepper
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp Gochugaru (Korean chili flakes, fine)
  • 8 Tbsp soy sauce (Guk-ganjang or Jin-ganjang)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds (coarsely crushed)

Cooking Instructions

First, wash the rice thoroughly and soak it for about 30 minutes until well-hydrated. Drain the soaked rice in a sieve. Slice the radish thinly (about 0.5cm thick) and then cut it into strips about 3cm long. Oysters, if not for immediate consumption after purchase, are best rinsed gently in a light saltwater solution (about 2 cups water with 1/2 Tbsp salt) to remove any impurities. After rinsing, drain them in a sieve. This step helps reduce any ‘fishy’ odor and results in a cleaner taste.

Now, it’s time to cook the pot rice. In a rice cooker or a pot (a heavy-bottomed one is recommended), add the drained rice. Evenly place the sliced radish over the rice. It’s best to use slightly less water than you would for regular steamed rice. Add 2 cups (400ml) of water, the same amount as the rice, carefully pouring it between the rice and radish rather than directly on top. Bring the mixture to a boil over medium to high heat, letting it cook until it starts to boil vigorously and steam fills the pot, which should take about 7-10 minutes.

Once steam is nicely rising from the pot, gently stir with a spatula to mix the rice and radish, ensuring they don’t stick together. After mixing, arrange the fresh oysters you prepared attractively on top of the rice. Once the oysters are in place, reduce the heat to the lowest setting, cover the pot, and let it simmer for another 10 minutes. During this process, the delicious juices from the oysters will infuse into the rice, deepening its flavor.

After simmering for 10 minutes, the rice will become fluffy and the oyster flavor will permeate throughout. Turn off the heat and let the pot rice rest, covered, for an additional 5 minutes to steam. This resting period allows the rice grains to become more tender and moist, completing your delicious oyster pot rice. While the rice is steaming, prepare the fragrant scallion soy sauce by mixing the listed ingredients to serve alongside for an even more delightful meal.
