Ingredients

  • 4 large eggs
  • 10 cherry tomatoes
  • 200g mushrooms (your favorite variety)
  • 1/4 onion
  • 1/2 Tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 2 slices of bread (for serving)
  • 1 handful of leafy greens (for salad)

Cooking Instructions

First, prepare the vegetables for the omelette. Rinse the mushrooms thoroughly under running water and tear them into bite-sized pieces along their natural grain. Peel and thinly slice the onion. Wash the cherry tomatoes and halve them. Wash and dry the leafy greens.

Place the sliced onions in a microwave-safe bowl, cover with plastic wrap, and microwave for 2 minutes until softened. This step enhances the onion’s sweetness and flavor.

Season the microwaved onions with a pinch of salt and pepper. These seasoned onions will be part of the omelette filling along with the mushrooms.

In a bowl, crack 4 fresh eggs. Season them with a little salt and pepper and whisk gently until well combined. Whisking the eggs until smooth will result in a tender omelette.

Heat 1/2 tablespoon of olive oil in a non-stick skillet over medium-low heat, swirling to coat the pan evenly. Pour about half of the whisked egg mixture into the pan, spreading it thinly. Gently tilt the pan to ensure the egg spreads evenly.

When the egg is about halfway cooked, arrange the seasoned onions and mushrooms over one half of the egg. It’s best to pile the filling towards one side of the pan to make folding easier.

While the egg is still slightly moist, carefully fold the omelette in half using a spatula or chopsticks to create a half-moon shape. Folding before the egg is completely set helps prevent it from breaking.
