🌟 For the Creamy Hummus- 2 cups dried chickpeas (approx. 300g)
- 3 cloves garlic
- 5 tablespoons fresh lemon juice
- 6 tablespoons mayonnaise (for a creamy texture)
- 5 tablespoons peanut butter
- 1/4 teaspoon ground cumin
- 1 1/2 cups olive oil (approx. 225ml)
- Pinch of salt (to taste)
- Pinch of black pepper (to taste)
🌯 For the Fresh Hummus Wraps- 2 large tortillas
- 3 lettuce leaves
- 2 imitation crab sticks
- 1/4 red bell pepper
- 1/4 green bell pepper
- 1/4 yellow bell pepper
- 2 large tortillas

Cooking Instructions
Step 1
First, if you’re using dried chickpeas, soak them overnight in water. Place the soaked chickpeas in a pot and cover with plenty of fresh water. Bring to a boil over high heat, then reduce to medium-low and simmer for about 1 hour, or until the chickpeas are very tender. Drain the chickpeas thoroughly in a colander. (Tip: Softer cooked chickpeas will result in smoother hummus.)
Step 2
In a food processor or blender, combine the drained cooked chickpeas, 3 garlic cloves, 5 tablespoons lemon juice, 6 tablespoons mayonnaise, 5 tablespoons peanut butter, 1/4 teaspoon cumin, a pinch of salt, and a pinch of pepper. Add 1/2 cup (approx. 75ml) of the olive oil now and process until finely ground.
Step 3
While the processor is running, slowly drizzle in the remaining 1/2 cup (approx. 75ml) of olive oil. Continue to process or blend until the hummus reaches your desired smooth and creamy consistency. If it’s too thick, add a little more olive oil; if it’s too thin, add a few more chickpeas. Once it’s perfectly smooth and creamy, it’s ready. (Tip: Using an immersion blender allows you to mix directly in the bowl, which is very convenient.)
Step 4
To prepare the hummus wraps, julienne the yellow bell pepper, red bell pepper, and green bell pepper after washing and seeding them. Shred the imitation crab sticks lengthwise. (Tip: Feel free to use other vegetables like cucumber or carrots instead of bell peppers.)
Step 5
Lay a tortilla flat. Spread a thin layer of the prepared hummus evenly over the tortilla. Top with 3 lettuce leaves, the julienned bell peppers and green pepper, and the shredded imitation crab sticks. Fold in the edges slightly and roll up tightly to create a delicious and satisfying hummus wrap!
