Ingredients- 2 ripe avocados
- 2 ripe bananas
- 1/2 onion
- 1 cup milk
- 30g butter
- 2 pinches salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, peel the avocados and remove the pits. Scoop out the flesh. If the skin is difficult to peel, cutting the avocado in half and scooping with a spoon can be easier.
Step 2
Peel the onion and chop it very finely. If you prefer a milder onion flavor, you can rinse the chopped onion in cold water and drain it before cooking.
Step 3
Heat a pot over medium-low heat and melt the butter. Add the finely chopped onion and sauté until it becomes translucent. Sautéing the onion until sweet will deepen the soup’s flavor.
Step 4
Once the onion is translucent, add the prepared avocado flesh and the 2 bananas to the pot.
Step 5
Using a spatula or ladle, mash the avocado and bananas until smooth and creamy directly in the pot. The warmth from sautéing the onions will help soften the fruits, making them easier to mash.
Step 6
Pour in 1 cup of milk and mix well with the ingredients. You can adjust the amount of milk to achieve your desired consistency. Add more milk if you prefer a thinner soup.
Step 7
Now, use an immersion blender to purée the soup until smooth. For a pleasant texture, aim to blend until it’s mostly smooth but still has a slight hint of avocado and banana chunks. If you don’t have an immersion blender, a regular blender can be used, or you can press the mixture through a sieve for a very smooth result.
Step 8
Bring the soup to a gentle simmer, then cook for a moment longer. Season with 2 pinches of salt and a pinch of black pepper to taste. For a touch of sweetness, you can add a little honey or maple syrup if desired. This soup is wonderfully refreshing when served chilled, especially during warmer months! Served warm, it’s a creamy and satisfying meal.
