Main Ingredients- 1 handful dried pollack (about 30g)
- 1 egg
- 1 serving rice (about 200g)
- 2 Tbsp sesame oil
- Scallions, chopped, to taste
Cooking Instructions
Step 1
First, briefly soak the dried pollack in cold water and immediately squeeze out any excess moisture. This helps reduce any fishy smell and makes it tender. Finely chop the prepared dried pollack.
Step 2
Wash and thinly slice the scallions. You can use both the white and green parts. They add a beautiful color and fragrant aroma when sprinkled on top of the porridge.
Step 3
In a pot, combine the chopped dried pollack and 2 tablespoons of sesame oil. Sauté over low heat for about 1-2 minutes, stirring constantly, until the pollack is tender and fragrant. Be careful not to burn it.
Step 4
Add the 1 serving of rice to the pot with the sautéed pollack. Pour in half a cup of water (about 100ml) and stir-fry, allowing the rice to break down slightly. This helps prevent the rice from clumping and ensures a smoother texture.
Step 5
Now, pour in the 600ml of water into the pot. Stir once to combine the rice and pollack.
Step 6
Bring to a simmer over medium heat and cook, stirring occasionally, until the rice grains are fully softened and the porridge has thickened to your desired consistency. Stir gently to prevent the rice from sticking to the bottom of the pot.
Step 7
Once the rice has softened and the porridge has thickened, crack in 1 egg. Gently whisk the egg with a whisk or break it up with chopsticks as you stir to ensure it’s evenly cooked and not clumpy. The egg will make the porridge even creamier and richer.
Step 8
Finally, add the prepared chopped scallions. Stir them in and let the porridge simmer for another moment.
Step 9
Taste and season with a pinch of salt if needed. Once all the ingredients are well combined and the porridge is heated through, turn off the heat, ladle it into a bowl, and enjoy! This porridge is perfect for breakfast or when you need something light and comforting.
