Somewhere between a tofu braise and a stew! This tofu and egg dish is perfect for mixing with rice, featuring a deep and rich flavor. It’s a simple yet satisfying meal that will fill your stomach. Main Ingredients- 1 block Tofu (approx. 300g)
- 1/2 Onion (medium size)
- 1 handful Green Onions (approx. 50g)
- 3 Tbsp Sesame Oil or Perilla Oil
- 3 Eggs
Sweet & Spicy Sauce- 250ml Water (approx. 1 cup)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced Garlic
- 1 Tbsp Sugar
- 4 Tbsp Soy Sauce (regular)

Cooking Instructions
Step 1
First, prepare the vegetables. Thinly slice half an onion. Finely chop the green onions. (About 50g worth).

Now, let’s make the delicious stew sauce. Pour 250ml of water into a pot or bowl, and add 2 tablespoons of gochugaru. Whisk well to ensure there are no clumps.

Add 1 tablespoon of minced garlic to enhance the garlic flavor.

For sweetness, add 1 tablespoon of sugar. Sugar helps balance the flavors and mellows out the spiciness.

Finally, add 4 tablespoons of soy sauce, the key to umami, and stir until all ingredients are well combined. (Tip: After mixing the sauce, add all the chopped green onions and onions and mix well to complete the sauce. Preparing the sauce in advance can shorten your cooking time.)

Cut the tofu into 1cm thick slices, making them easy to eat. It’s best to slice the tofu to a moderate thickness, as cutting it too thin can make it fall apart easily.

Now it’s time to start cooking. Generously coat the bottom of the pot with 3 tablespoons of sesame oil or perilla oil. The aromatic oil will add flavor to the tofu.

Arrange the sliced tofu evenly on the bottom of the pot without any gaps. This helps the tofu absorb the sauce evenly.

Pour the prepared sauce evenly over the tofu. Drizzle it meticulously so the sauce seeps into the tofu.

Place the pot over medium heat and bring it to a boil. Once the sauce is bubbling vigorously, maintain medium heat to allow the tofu to absorb the flavors. (Tip: Heat control is important! If you boil over high heat, the sauce can reduce too quickly. So, boil over medium heat, and once the sauce starts to reduce, lower the heat to low and simmer gently to let the flavors deeply penetrate the tofu.)

When the tofu has absorbed enough flavor and the sauce has slightly thickened, carefully crack 3 eggs into the pot. Cover with a lid and cook over low heat until the egg whites are set. (Tip: After adding the eggs, avoid stirring too much to maintain their shape.)
