Chop the chives into approximately 1cm lengths. Cut the cherry tomatoes into quarters. Having all your ingredients prepped beforehand will make the cooking process much smoother.

Step 2

Crack the 5 eggs into a bowl. To achieve a silky-smooth texture, strain the eggs through a fine-mesh sieve to remove the chalazae (the white, stringy bits). Gently whisk the eggs until well combined.

Step 3

Now, let’s start sautéing. Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped onions first and sauté until they become translucent and release their natural sweetness. This step is crucial for building flavor.
