Nutritious Chives and Onion Pancake with Chicken Breast

When you feel like a simple chive and onion pancake isn’t quite enough, try this recipe! We’re adding chicken breast for extra nutrition and a satisfying texture. This pancake is crispy on the outside, tender on the inside, and makes for a hearty meal.

Main Ingredients

  • 120g fresh chives
  • 1 medium onion (approx. 115g)
  • 1 chicken breast (approx. 130g)
  • 1 fresh egg
  • 75g pancake mix (buchim garu)
  • 1 Tbsp curry powder
  • 1 Tbsp tuna extract (or fish sauce)
  • 120ml water
  • Olive oil (or cooking oil)

For Boiling Chicken Breast

  • 1 Tbsp cooking wine (for odor removal)
  • 500ml water

Cooking Instructions

Step 1

In a pot, combine 500ml (about 2 cups) of water and 1 Tbsp of cooking wine. Add the chicken breast and boil over medium heat with the lid open for about 25 minutes, or until cooked through. Adjust cooking time based on the size of the chicken breast. Once cooked, drain and set aside.

Wash the onion and slice it thinly into strips. This will give the pancake a pleasant crunch.

Cut the prepared chives into bite-sized pieces, about 2-3 cm long. Shorter pieces make the pancake easier to handle.

In a large bowl, combine the cut chives, sliced onion, and 1 cracked egg. Add the 75g of pancake mix, 1 Tbsp of curry powder, and 1 Tbsp of tuna extract.

Shred the boiled and cooled chicken breast into bite-sized pieces (about 1-2 cm) along the grain. Be careful when shredding as it might still be warm to avoid burns.

Add the shredded chicken breast to the bowl. Mix all the ingredients thoroughly until no dry pancake mix is visible. Gradually add 120ml of water, mixing until you achieve a batter consistency that holds together well but isn’t too watery.

Heat a frying pan over medium heat and add a generous amount of olive oil (or cooking oil). Ladle portions of the batter onto the pan, spreading them out into round shapes. You can adjust the thickness to your preference.

Cook for about 2 minutes over medium heat until the edges turn golden brown. Once the bottom is sufficiently cooked, carefully flip the pancake with a spatula and cook the other side until it’s also golden brown and crispy. Your delicious chives and onion pancake is now ready!
