Healthy Brunch Option: Hearty and Delicious Chickpea Open-Faced Sandwich
Here’s another delightful chickpea dish, a popular superfood! Following the success of our previous chickpea salad, which was incredibly delicious, we’ve adapted it into a wonderful open-faced sandwich. The method of cooking the chickpeas and the basic dressing are similar to the salad, but we’ve slightly mashed the chickpeas to make them perfect for topping bread. You can also customize it with your favorite herbs, making it an ideal brunch choice! It’s a simple yet satisfying meal packed with nutrients and flavor.
Ingredients- 100g Chickpeas
- 2 slices Square Bread
- 60g Greek Yogurt
- 20g Mayonnaise
- 1 clove Garlic
- Fresh Basil (or herbs of your choice)
- Salt to taste
- Black Pepper to taste
Cooking Instructions
Step 1
Chickpeas require significant soaking time, so it’s best to soak them the night before. Place 100g of chickpeas in plenty of water and let them soak for 6 to 12 hours until they are well-hydrated.
Step 2
After soaking, drain the chickpeas and place them in a pot with enough water to cover them completely. Bring to a boil over medium-high heat for about 10 minutes, then reduce the heat to low and simmer for at least 30 minutes, or until the chickpeas are very tender. For added flavor, you can add 1-2g of salt to the cooking water.

Once cooked, drain the chickpeas in a colander and let them sit for a few minutes to allow excess water to evaporate.

To prevent the chickpea mixture from sliding off the bread, it’s best to mash them slightly rather than leaving them whole. Use a potato masher or the back of a fork to achieve your desired texture. If you prefer a very smooth consistency, you can use a food processor, but be cautious as adding water can make the mixture too thin. I personally prefer mashing with a fork or masher for better texture control.
Step 5
Add 60g of Greek yogurt and 20g of mayonnaise to the mashed chickpeas. Feel free to adjust the quantities to your preference for creaminess and tang.

Season with a pinch of black pepper for aroma. Finely mince 1 clove of garlic or use a garlic press to add it to the mixture. The garlic’s pungent notes will beautifully complement the chickpeas.
Step 7
Thoroughly mix all the ingredients together using a spatula or spoon. Ensure everything is well combined for a harmonious flavor.
Step 8
Finally, chop and add fresh basil leaves. You can substitute basil with other herbs like dill or mint, depending on your preference. Herbs add a wonderful freshness and aroma, so don’t skip this step!
