Main Ingredients

  • Beef (for bulgogi or ground beef) 150g
  • Burdock root 150g
  • 1 Tbsp minced garlic
  • Pinch of black pepper

Cooking Instructions

Thoroughly wash the burdock root, scrubbing off any dirt with a scouring pad. Then, thinly slice it into 5-7cm long julienne strips. To prevent browning and remove any bitterness, soak the julienned burdock root in cold or salt water for about 10 minutes. Drain and pat dry.

In a bowl, combine the beef with 1/3 Tbsp soy sauce, a little minced garlic, black pepper, and 1/3 Tbsp sugar. Gently mix to marinate the beef. Let it sit for a while to allow the flavors to meld.

In a wide pan, arrange the drained julienned burdock root in an even layer. Pour in 6 Tbsp water and 4 Tbsp soy sauce. Reduce the heat to low. Using chopsticks, gently stir-fry the burdock root, ensuring it’s evenly coated with the sauce. Once the burdock root is somewhat cooked, push it to one side of the pan. Add the marinated beef and break it apart with chopsticks as you stir-fry. Once the beef changes color, mix it with the burdock root and continue to cook.

Remove the stems from the dried red chilies, deseed them, and thinly slice them lengthwise to match the burdock root’s length. Add them to the pan. Stir in 1 Tbsp plum extract to add a fragrant aroma and subtle sweetness. Plum extract helps to remove any gamey odor and enhances the umami flavor.

Finally, add 2 Tbsp honey for a glossy finish and sweetness, 1 Tbsp sesame oil for a nutty aroma, and a sprinkle of toasted sesame seeds for presentation. Give it a final gentle mix, and your delicious Braised Burdock Root and Beef is ready! Serve it over warm rice for a delightful meal.
