Essential Ingredients- Beef (for soup) 200g
- Dried seaweed 4 Tbsp (approx. 10g)
- Sesame oil 2 Tbsp
- Soy sauce for soup (Guk-ganjang) 2 Tbsp
- Salt to taste
- Minced garlic 1 Tbsp
- Water 1L (approx. 5 cups)

Cooking Instructions
Step 1
Start by preparing 200g of beef for soup. Soaking it in cold water for about 10 minutes helps remove excess blood, resulting in a cleaner broth flavor. After soaking, gently pat the beef dry with paper towels.
Step 2
Measure out 4 tablespoons of dried seaweed. Soak it in cold water for 10-15 minutes until fully rehydrated. Once softened, rinse the seaweed thoroughly by squeezing it with your hands, then squeeze out excess water. Cut the seaweed into bite-sized pieces (about 3-4 cm). Squeezing out the water well prevents the soup from becoming too watery when you stir-fry.
Step 3
Have the drained beef and the squeezed seaweed ready. If there’s any remaining moisture on the beef or seaweed, lightly pat them dry with paper towels.
Step 4
Heat 2 tablespoons of sesame oil in a deep pot over medium heat. Add the beef (with excess water removed) and stir-fry until the surface turns white. It’s important to sauté the beef thoroughly until it’s no longer pink.

Once the beef has turned white, add the rehydrated seaweed and 2 tablespoons of soy sauce for soup. Stir-fry for about 1 minute more. This step allows the seaweed to absorb the beef’s flavor, creating a richer taste.

Pour 1 liter (about 5 cups) of water into the pot. Bring the soup to a boil over high heat, then reduce the heat to medium and simmer for another 5 minutes. This simmering time ensures the seaweed becomes tender and the flavors meld beautifully into the broth.
Step 7
Finally, stir in 1 tablespoon of minced garlic and 1 tablespoon of tuna extract (or fish sauce, if using). Mix well. Since the soup already has the flavor from the soy sauce for soup, adjust the seasoning with salt to your preference. If it’s not salty enough, gradually add salt until it tastes just right.
