Rice Ingredients

  • 1 eggplant
  • 100g beef (minced or finely chopped)
  • 1.5 cups rice
  • 3 perilla leaves

Sauce Ingredients

  • 3 Tbsp soy sauce
  • 1 Tbsp cooking wine (mirin)
  • 1 Tbsp sesame oil
  • 0.5 tsp minced garlic
  • A pinch of sesame seeds
  • A small amount of chives (finely chopped)

Cooking Instructions

Step 1

First, pat the beef dry with paper towels to remove excess blood. Marinate it by gently mixing with 1 Tbsp soy sauce, 0.5 Tbsp cooking wine, a little minced garlic, and a pinch of pepper. Wash the eggplant thoroughly, remove the stem, and cut it into about 5cm lengths. Wash the perilla leaves, pat them dry, and thinly slice them.

Wash the rice and let it drain in a sieve for about 30 minutes. Place the drained rice in your rice cooker. Add slightly less water than you normally would for cooking rice. Evenly spread the marinated beef over the rice. Press the cook button on your rice cooker to begin cooking the rice. (Mixing in multi-grain or brown rice will make it even healthier and tastier.)

Once the rice starts boiling, reduce the heat to low and use the steaming time to add the sliced eggplant on top of the rice. If you add the eggplant too early, it can become mushy and lose its texture, so it’s best to add it when the steaming process begins. Close the lid and let it steam for about 10-15 minutes.
