Cooking Instructions
Step 1
Start by bringing a pot of anchovy and kelp broth to a boil. Once boiling, add the thoroughly washed bean sprouts (500g) and let them cook. After the soup returns to a boil, continue to simmer for another 3 minutes. During this time, carefully scoop out about two-thirds of the cooked bean sprouts and set them aside to cool. These will be used for the seasoned bean sprout dish.

Now, it’s time to season the bean sprout soup remaining in the pot. Use fish sauce (or soy sauce) and salt. Taste as you go and add them in equal parts or adjusted to your preference. A little fish sauce adds umami, while salt provides a clean finish.

Add minced garlic to enhance the refreshing and deep flavor of the bean sprout soup. About 1/2 teaspoon is usually sufficient. Simmering the garlic will further enrich the broth’s taste.
