Let’s stir-fry the bamboo shoots from the freezer with savory perilla powder!
Ingredients- Bamboo shoots, 1 large bowlful (about 200g fresh)
- Perilla seed powder, 3 Tbsp
- Onion, 1 medium
- Green onion, 1/2 bunch
- Perilla oil, 1 Tbsp
- Soup soy sauce (Guk-ganjang), 1 Tbsp
- Sugar, 1 tsp
- Minced garlic, 1 Tbsp
- Olive oil, 1 Tbsp
- Sesame seeds, 1 tsp
- Red chili pepper, 1 (optional)
- Sesame oil, a little
- Honey, a little (optional)
Cooking Instructions
Step 1
First, prepare the bamboo shoots. If using fresh bamboo shoots, peel off the outer layers and wash them thoroughly. If using frozen bamboo shoots, thaw them and rinse lightly under running water. Cut the prepared bamboo shoots into bite-sized pieces (about 5cm long), then thinly shred them lengthwise. This helps the seasoning penetrate better, making them even more delicious.
Step 2
In a large pan or wok, heat 1 Tbsp of olive oil and 1 Tbsp of perilla oil over medium-low heat. Once the pan is warm, add 1 Tbsp of minced garlic and stir-fry until fragrant, being careful not to burn it. This process allows the garlic’s aroma to infuse into the oil, adding depth to the dish.
Step 3
When the garlic is fragrant, add the sliced onion and green onion. Stir-fry until the onion becomes translucent and the green onion wilts slightly over medium heat. The natural sweetness of the onion will be released, enhancing the flavor.
Step 4
Once the onion and green onion are partially cooked, add the prepared bamboo shoots. Increase the heat to high and stir-fry quickly for 1-2 minutes to keep the bamboo shoots crisp while ensuring all ingredients are well combined.
Step 5
Now it’s time to season. Add 1 Tbsp of soup soy sauce, 1 tsp of sugar, and 3 Tbsp of perilla seed powder. Stir-fry quickly to combine everything evenly, making sure the perilla seed powder doesn’t clump. The nutty aroma of the perilla seeds will fill the air, whetting your appetite.
Step 6
The stir-fry is almost complete. Reduce the heat slightly, then add 1 tsp of sesame seeds, a little sesame oil, and optionally, a little honey. Adding honey will provide a subtle sweetness, balancing the overall flavors. Gently mix everything together.
Step 7
