  • 14 fresh scallops
  • 1 handful of walnuts (approx. 30g)
  • 1 bowl of cooked rice

First, rinse the scallops thoroughly. Place them in boiling water and blanch for about 5 minutes, just until their shells begin to open. Be careful not to overcook them, as they can become tough.

Carefully remove the scallop meat from the shells and place it in a prepared bowl. It’s a good idea to wash the shells and set them aside for later use.

Place the walnuts in a zip-top bag and lightly crush them using a rolling pin or a bottle. It’s best to crush them coarsely for a bit of texture, rather than making a fine powder. Add the crushed walnuts to the bowl with the scallop meat.

In the bowl, combine 3 Tbsp of mayonnaise, 1/2 Tbsp of minced garlic, 2 Tbsp of milk, and 2 pinches of salt. Mix everything together to prepare the seasoning.

Pour all the seasoning into the bowl containing the scallop meat and crushed walnuts. Gently mix everything together, being careful not to break up the scallop meat. Ensure the seasoning coats all the ingredients evenly.

Remove the inner filling from the aged kimchi, rinse it lightly under running water to reduce spiciness, and squeeze out any excess moisture. Finely chop the kimchi. Avoid chopping it too finely, as this can affect the texture; aim for a moderate size.

Spread one portion of warm cooked rice evenly in an oven-safe dish or bowl. Then, add the finely chopped aged kimchi on top, according to your preference. The kimchi’s tangy flavor will cut through any richness and add a wonderful aroma.

Tear or cut the slice of cheddar cheese and sprinkle it evenly over the rice and kimchi. Adjust the amount of cheese according to your liking.
