The best time to use an avocado is when its skin color shifts from bright green to a deep purplish hue, and it yields slightly to gentle pressure. Choose an avocado that feels soft but not mushy.

Wash the ripe avocado thoroughly. Carefully cut it in half lengthwise, all the way around the pit.

To remove the pit, firmly insert the blade of a knife into it and twist gently. The pit should pop out easily. Wipe the pit clean with a paper towel.

Scoop out a little of the avocado flesh from the center of each half using a spoon to create a larger well for the egg. Be careful not to scoop too much, or the avocado might break. (The scooped-out avocado flesh can be enjoyed separately as a snack or added to a salad.)

Carefully crack one egg into each avocado half. Try not to break the yolk. If any egg white spills over, you can gently scoop it back in. Sprinkle a pinch of salt and pepper over each egg.
