Nutritious Autumn Radish Stir-Fry Recipe

  • 1.5 Tbsp coarse salt

Seasoning and Other Ingredients

  • 2-3 Tbsp sunflower oil
  • Pinch of seasoned salt (for adjusting taste)
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds (crushed)

Cooking Instructions

First, peel and prepare half of a fresh Korean radish. Slice the peeled radish into thick strips, about 0.5 cm thick. Slicing them too thinly might cause them to break easily when stir-frying, so maintaining a moderate thickness is key.

In a bowl, combine the sliced radish with 1.5 Tbsp of coarse salt and mix well. Let it salt for 10 minutes to draw out moisture and reduce any bitterness, enhancing its crispiness. After salting, squeeze the radish firmly by hand to remove excess water. It’s important not to rinse the radish; squeeze out the water directly to retain the seasoning.

Heat about 2-3 Tbsp of sunflower oil in a pan over high heat. Add the squeezed radish strips and stir-fry quickly for 5-6 minutes. Stir-frying over high heat helps to keep the radish crisp and prevents excessive moisture loss. If you prefer a softer texture, you can increase the stir-frying time by an additional 2-3 minutes.

As the radish stir-fries, it will naturally release its own moisture. Once the radish reaches your desired tenderness, turn off the heat. Finally, stir in 1 Tbsp of sesame oil for a nutty aroma and 1 Tbsp of freshly crushed sesame seeds for a delicious finish. You can also add a pinch of seasoned salt at this stage to adjust the taste to your preference.
