Step 1
First, it’s crucial to remove the moisture from the tofu. Wrap the tofu in a cheesecloth or paper towels and press firmly with your hands to squeeze out as much water as possible. This step ensures the tofu mixes well with the eggs and prevents the omelet from crumbling. Separate the egg whites and yolks. For the egg whites, break the chalazae (the stringy bits) with a fork. Add the squeezed tofu to the egg whites and mash them together until well combined. Ensure there are no large lumps and the mixture is crumbly. Season lightly with salt. Place the egg yolks in a separate bowl, add 3 tablespoons of water and a pinch of salt, and mix well.
Step 2
Prepare a frying pan for making the omelet. Add a generous amount of cooking oil to the pan and heat it over low heat. First, pour the egg white and tofu mixture thinly into the pan to cook like a flat omelet (jidan). Once one side is cooked, flip it and cook slightly more. Then, push this cooked layer to one side of the pan. Now, pour the seasoned egg yolk mixture into the empty space and spread it thinly to cook. As the yolk omelet starts to cook, carefully place the previously cooked egg white and tofu layer on top of it. Repeat this process 2-3 times, layering the egg white/tofu mixture and the yolk mixture alternately. This layering technique creates beautiful colors. For the final layer, pour any remaining egg mixture over the entire roll to enclose it.
Step 3
Cook slowly over medium-low heat, ensuring the omelet cooks evenly. Pay close attention to the heat to prevent burning, and flip the omelet occasionally to achieve a nice golden-brown color on all sides. Once cooked, remove the tofu rolled omelet from the pan and let it cool slightly. Before it cools completely, cut it into bite-sized pieces (about 2cm thick) for neat presentation.
Step 4
Arrange the neatly sliced tofu rolled omelet on a serving plate. Finally, sprinkle some sesame seeds for a nutty flavor and an appealing visual finish. Your delicious tofu rolled omelet is ready! It’s wonderful when served warm, but its soft texture also makes it perfect for lunchboxes when cooled.
